I do most of the cooking at home and totally enjoy making a nice meal or a snack. I do make our own sausages, I hate the rubbish that supermarket stores give us. Mine nearly always pork with lots of herbs and flavour. When cooked no fat leaking everywhere and we know what we are eating. Make dim sim as well pork or turkey so easy,

MONSTERS EYES
Just found this one looks great, I would have to add curry
Looking for something creepy to serve for Halloween? How about these truly gross, bloodshot monster eyes? I got the idea from this blog. Looks a bit like me after to much wine.
These are super simple and really delicious.
Creepy Monster Eyeballs
Make 8 eyes
4 hardboiled eggs, cut in half lengthwise
red food coloring
green food coloring
3 Tblsp. mayonnaise
1/2 tsp. paprika
4 stuffed olives, cut in half
Put the egg yolks in a bowl and mash with mayonnaise and paprika. Add a couple drops of food coloring to make them green and scoop back into the egg halves. Top with half an olive and draw on squiggly blood veins with red food coloring.

Chicken schnitzel TODAY masterchef Julie Goodwin cooks a tantalizing chicken schnitzel.
Chicken Schnitzel with parmesan crumb
http://today.ninemsn.com.au/article.aspx?id=7957245
Prep time: 10 minutes.
Cooking time: 10 minutes
Ingredients
4 single chicken breasts (small)
1 cup flour
Salt and white pepper
1 egg
2 cups breadcrumbs (preferably fresh)
1/2 cup finely grated fresh parmesan cheese
Vegetable oil for frying
Method :
1. Cut the chicken breast in half horizontally to make two equally thick pieces.
2. Pound gently with a meat mallet.
3. Season flour with salt and pepper.
4. Beat egg with 1tbsp water. Combine breadcrumbs with parmesan cheese.
5. Line up flour, egg and breadcrumb bowls in a row. Dip each piece of chicken into flour, then egg, then breadcrumbs.
6. In a large frying pan or chef's pan, heat 5mm oil. The heat should be moderate, not high.
7. Fry the schnitzels in batches - don't overcrowd the pan. By the time they are golden brown on each side, they will be cooked but still juicy in the middle, if done over a moderate heat. This should take around 3 minutes each side. Use fresh oil after each batch to avoid loose breadcrumbs burning and sticking to the schnitzels.
8. Serve with lemon wedges and salad.
This one turned out really nice too
Only problem was Someone hid the mallet so I improvised.

I needed a very basic veg curry dish now I have decided to become diabetic.
This seem to fit the bill so I will try it tonight.
AT LAST a pocket bread recipe that looks like it will work
